ABOUT US

Machine Shop is a boulangerie and patisserie that celebrates produce and ingredients from small, local farms in the mid-Atlantic. Sourcing fruit from Three Springs Fruit Farm in Aspers, PA, produce from Green Meadow Farm in Gap, PA, and whole grains from Castle Valley Mill in Doylestown, PA the bakery incorporates fresh fruits, vegetables, and locally grown and milled grain to make pastries, breads, ice creams, jams, and more that represent the diverse, rich agriculture Pennsylvania is known for. In tandem with an emphasis on the handmade, and embracing high-touch, high-standard French baking traditions, Machine Shop is a neighborhood destination for those invested in sustainability and their local foodshed.

Sustainability and high standards are the hallmarks of everything we do at Machine Shop, whether in the products we source to use in our viennoiserie, or the fact that every pastry, loaf of bread, or croissant has been touched and shaped by hand. Using French techniques in combination with global perspectives, Machine Shop’s aim is to make high-quality, exceptional pastries and breads with ingredients that grow and are cultivated locally. 

The bakery began as a wholesale operation in 2016 on the fourth floor of the Bok Building, and moved after a post-pandemic closure in January 2022 to the ground floor of the building on Dudley Street to expand our offerings and convert the bakery to a retail shop. In 2022, pastry chef and owner Emily Riddell was recognized as one of FOOD & WINE’s Best New Chef’s and the next year was nominated for an outstanding pastry chef award from the James Beard Foundation. In 2022 Machine Shop won an Eater Best New Restaurant award. Now, with the boulangerie and patisserie open five days a week, customers can find an ever-growing list of offerings to satisfy their taste for local, sustainable, and refined pastries and breads, all in a space where a robust and connected community is cultivated through sharing food.
